Matcha tonic

Whisk 2 g of matcha with 30 ml of water at about 80 °C, fill a glass with ice and 150 ml of tonic water, then pour the matcha slowly over the top. Add a slice of lemon, lime or yuzu if you like.

  • 2 g matcha
  • 30 ml water, at about 80 °C
  • 150 ml tonic water, chilled
  • A glass of ice
  • Lemon, lime, grapefruit or yuzu (optional)

Steps

  1. Sift 2 g into the bowl

    Through a fine sieve so nothing clumps.

  2. Add 30 ml at 80 °C

    Pour in a thin stream around the powder.

  3. Whisk the shot

    Fast W strokes until smooth.

  4. Pour over tonic

    Fill a glass with ice and tonic water, then pour the shot in slowly so it doesn't fizz over.

Tonic’s bitterness and fizz make a sharp, bright drink. Pour the matcha last and slowly: it can foam up when it meets the bubbles.

Make it yours

  • Less bitter: use half tonic, half sparkling water.
  • Citrus: a squeeze of lemon or yuzu in the glass before the tonic.
