Matcha cortado
For a matcha cortado, whisk 3 g of matcha with 40 ml of water at about 80 °C, then add about 50 ml of warm milk. It's a small drink where the tea stays strong.

- 40–60 ml warm milk
Steps

Sift 3 g into the bowl
Through a fine sieve so nothing clumps.

Add 40 ml at 80 °C
Pour in a thin stream around the powder.

Whisk the shot
Fast W strokes until smooth, then a few slow circles.
Add the milk
Pour in 40 to 60 ml of warm milk and stir once.
A cortado keeps the milk to roughly the same amount as the tea, so the matcha comes forward. It’s a good way to taste how a tin holds up in milk before you commit it to full lattes.
