How to find a matcha recipe you like

To find a matcha recipe you like, start from a basic recipe and change one thing per bowl: first the strength (matcha to water), then the water temperature or the amount of milk. Keep the same tin, note what you noticed, and save the version you want to make again.

A recipe is a place to begin. Matcha amount, water, temperature, and milk each change the cup in a different way.

Begin with strength

More matcha in the same amount of water makes a fuller, denser cup. More water makes it lighter. If the tea feels too faint, try a little more matcha next time. If it feels too intense, try more water before deciding the tin is not for you.

Then try temperature or milk

Water temperature can change which flavours stand out. A slightly cooler cup may taste gentler; a hotter one may feel sharper. Milk also changes the balance: more milk can soften the tea’s intensity, while less lets it come forward. Your preferred balance may differ from tin to tin.

Compare one change at a time

Make a cup, note what you liked, then change just one amount or setting on the next brew. Keep the same tin and preparation style so the comparison is useful. A quick note such as “smoother, but too light” is enough. Save the version you want to make again.

Tama is built around this: every bowl keeps the exact amounts you used, your rating and your note, so the next bowl can start from the one you liked.

Questions

What should I change first if my matcha tastes wrong?
Start with strength. If it tastes faint, try a little more matcha; if it's too intense, try more water before deciding the tin isn't for you.
Does water temperature change how matcha tastes?
It can. A slightly cooler cup may taste gentler and a hotter one may feel sharper. Many people start around 75 to 80 °C and adjust from there.
