## Ingredients

- 3 g matcha
- 40 ml water, at about 80 °C
- 40–60 ml warm milk

## Steps

1. **Sift 3 g into the bowl.** Through a fine sieve so nothing clumps.
2. **Add 40 ml at 80 °C.** Pour in a thin stream around the powder.
3. **Whisk the shot.** Fast W strokes until smooth, then a few slow circles.
4. **Add the milk.** Pour in 40 to 60 ml of warm milk and stir once.

A cortado keeps the milk to roughly the same amount as the tea, so the matcha comes forward. It's a good way to taste how a tin holds up in milk before you commit it to full lattes.
